From Thailand to a Rooftop in Valletta
Anaalā is rooted in Iniala’s long-standing connection to Thailand, which began with Iniala Beach House.Years immersed in Thai hospitality, culture and cuisine led to a collaboration with Chef Ian Kittichai and the creation of Anaalā.
Today, that Thai heritage meets Iniala’s home in Valletta, bringing the spirit of Thailand to a rooftop above the city.

From Bangkok streets to the world stage
Behind every turn of the Menu-Go-Round is award-winning Chef Ian Kittichai: Thai chef, restaurateur, television personality and cookbook author, with a lifelong mission to take the flavours and stories of Thailand around the world.
And quite a journey it’s been.
It began with a curry cart on the streets of Bangkok and went on to take him through some of the world’s most celebrated kitchens, including El Bulli, The French Laundry and Le Cinq in Paris.
Back in Thailand, Ian became the first Thai national appointed Executive Chef of a five-star hotel anywhere in the world. He went on to create the acclaimed Issaya Siamese Club, earn a place on Asia’s 50 Best Restaurants, become an Iron Chef Thailand champion and lead judge on MasterChef Thailand, all while taking his approach to Thai cuisine around the globe.
Now, the journey has brought him to a rooftop in Valletta.

For Chef Ian, Thai cuisine isn’t one menu, one flavour or one story.
It’s North and Northeast. Central and the South. It’s ingredients, techniques and traditions shaped by very different places and passed from one generation to the next.
